Since opening its doors in December 2019, Water Street Waffle Company has been more than just a restaurant—it’s been a labor of love built from the ground up by Bobbi and Jeff Seger, alongside their two daughters. As a family-owned and operated business, their mission has always been to bring fresh, made-from-scratch flavors and a welcoming atmosphere to Historic Downtown Belton.


Before taking the leap into the restaurant industry, Bobbi and Jeff came from backgrounds in healthcare and the automotive industry. However, their true passion was always in creating incredible food and memorable experiences. Driven by their love for breakfast and a shared dream of bringing something unique to their community, they founded Water Street Waffle Company—a place where bold flavors, high-quality ingredients, and a rock and roll attitude come together.


Every dish served reflects their commitment to quality, using fresh, locally sourced ingredients—including herbs and vegetables grown right in the restaurant’s own garden. Whether it’s perfecting their signature Liège waffles or curating a menu that blends comfort and creativity, Bobbi and Jeff are dedicated to making every guest feel like part of the family.


Looking to the future, their vision is to grow Water Street Waffle Company beyond Belton, opening more locations to share their unique, from-scratch brunch experience with as many people as possible. They are passionate about redefining the food industry—proving that fresh, handcrafted meals can be served with speed, consistency, and heart. Their goal is to build a brand that stands for quality, passion, and a one-of-a-kind experience, all while staying true to their roots and the values that started it all.
